Kadhi Chawal Recipe – A Comforting Indian Delight

Ingredients
For Kadhi (Yogurt Curry):
1 cup yogurt (preferably sour)
3 tablespoons gram flour (besan)
3 cups water
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
Salt to taste
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 dried red chili
8-10 curry leaves
1/2 teaspoon fenugreek seeds (methi)
1 tablespoon ghee or oil
1 teaspoon chopped ginger
1 teaspoon chopped green chilies
Fresh coriander leaves for garnish
For Pakoras (Fritters):
1/2 cup gram flour (besan)
1/2 teaspoon red chili powder
1/4 teaspoon turmeric powder
1/2 teaspoon carom seeds (ajwain)
Salt to taste
Water as needed
Oil for deep frying
For Rice:
1 cup basmati rice
2 cups water
Salt (optional)
Instructions
Step 1: Make the Pakoras
In a bowl, mix gram flour, red chili powder, turmeric powder, ajwain, and salt.
Add water gradually to make a thick batter.
Heat oil in a pan and drop small portions of the batter into hot oil.
Fry until golden brown and crispy. Drain on paper towels and keep aside.
Step 2: Prepare the Kadhi
In a bowl, whisk yogurt and gram flour together until smooth. Add water, turmeric, red chili powder, coriander powder, and salt. Mix well.
Heat ghee or oil in a pan. Add mustard seeds, cumin seeds, dried red chili, curry leaves, and fenugreek seeds. Sauté for a few seconds.
Add chopped ginger and green chilies. Sauté for another minute.
Pour the yogurt mixture into the pan while stirring continuously to avoid lumps.
Let the kadhi simmer on low heat for 20-25 minutes, stirring occasionally.
Add the fried pakoras and cook for another 5 minutes. Turn off the heat and garnish with fresh coriander leaves.
Step 3: Cook the Rice
Wash the rice thoroughly and soak for 15 minutes.
In a pot, bring 2 cups of water to a boil. Add soaked rice and salt (if using).
Cover and cook on low heat until the rice is fully cooked and water is absorbed.
Serving Suggestions
Serve hot kadhi with steamed rice and a side of pickle or papad for an authentic taste. You can also add a drizzle of ghee on top for extra flavor!
